Kyol (결) is what comes together and finds its form in doing so. Where Yon ferments in a pressure tank, Kyol takes the long road: a second fermentation in the bottle, then three years on the lees. It is the method of Champagne, applied to a berry with roughly five times the acidity of a grape.
Those years on the lees give the wine what omija alone does not bring: brioche, nuts, a creamy texture that carries the acidity instead of breaking it. The bead is finer and more persistent than any tank method can give. The top of the OmyRosé line, in small quantity.

Omija | Five flavours of a special fruit from Korea.
Omija translates roughly as “five flavour fruit” and unites sweet, sour, salty, bitter and pungent in a single fruit. For centuries it was used in Korea as a medicinal plant; the classic medical text Dongeuibogam describes it as a remedy for hangovers, and King Yeongjo of the Joseon dynasty is said to have enjoyed it regularly as a tonic. Its botanical name, Schisandra chinensis, in older sources also Maximowiczia chinensis, hints at its former reputation in the West: a coveted spice from the Far East that eventually fell into oblivion because it simply could not be obtained.
