A father's legacy
from herbal medicine to rice wine
It did not begin as a winery but with traditional Korean medicine: the family ran a hanyakbang, a practice for herbal healing. There, rice wine was originally brewed to prepare medicinal herbs. In Korean medicine, fine rice wine has long been considered the carrier and amplifier of their healing power. Years of research turned this inherited knowledge into a family enterprise: Baekkyung, carried by the conviction that the wisdom of the healing arts endures in the glass.

home-grown rice and handmade nuruk
Few wineries control their raw materials as completely as Baekkyung. On the fertile plains of the Geum River, the house farms its own paddies and grows single-variety rice, including Tojong rice, old Korean landraces that predate modern high-yield breeding, each carrying an aroma of its own. The nuruk is made entirely by hand: wild yeasts and microorganisms from the air settle into the cake, much like a natural sourdough. For refinement of taste, two kinds of nuruk are made: one from wheat, in the classical manner, and another from rice, for authentic aromas and a pure, clear taste. The result is rice wine of a depth and complexity that no industrial pure-culture yeast can reach.
Baekkyung
inspired by Moby-Dick
The name means “white whale” (白鯨), the Korean title of Herman Melville's Moby-Dick. For Baekkyung, the great whale stands for the spirit of setting out: for courage, perseverance and the long voyage across the sea. Every bottle carries this message, a rice wine meant as a companion and quiet consolation for all who are bound for new shores. In taste and nuance, it moves between white wine and sake.
