Naekook has set itself a special task: reviving recipes from old Korean literature. In Nonsan, it creates rice wines that join Korea's classical medicinal-wine tradition with modern precision, above all the Signature line of wild forest mushrooms, the finest of which is the songi.
Songi: Korea's most precious mushroom
The songi (matsutake) grows only in the wild, beneath Korean red pines. To this day it resists every attempt at cultivation. Each mushroom is gathered by hand in the autumn mountain forests, which makes it one of Asia's most treasured ingredients. Korean medicine has long valued it as strengthening and good for digestion; its earthy, resinous aroma gives Songi Yakju a fine, forest-like depth that no other ingredient can match.

Few regions stand for Korean rice like Nonsan: the alluvial plain of the Geum River yields short-grain rice of the highest starch quality, the water is soft and balanced, the climate mild. For yakju, where the rice must not hide behind bold flavours but form the very foundation, there is no better origin.

a Korean tradition
In Korea, the line between medicine and rice wine was never sharply drawn: yakju literally means “medicinal wine”. The classical texts of Korean healing already describe rice wines made with herbs, roots and mushrooms to strengthen body and spirit. Naekook continues this tradition with scholarly care: recipes are reconstructed from old documents and brewed to today's standards, with mushrooms, red ginseng and herbs whose virtues Koreans have trusted for centuries.
